Why Tłusty Czwartek so important in Poland?

Tłusty Czwartek is much more than just a food-related day in Poland. It’s a deeply rooted cultural tradition that almost everyone takes part in, regardless of age or lifestyle.

At Bun and Coffee, Fat Thursday is more than just a themed day on the calendar. For us, it’s a chance to share a tradition that is part of our roots and bring it into the space we’ve created here in Malaga.

We like celebrating food traditions in a quiet, honest way — not by copying them perfectly, but by interpreting them through what we do: vegan baking. 

Not everyone knows this, but our donut recipe is inspired by a traditional Polish base passed down from Babcia Jasia — Moni’s grandma.

Even though our donuts are 100% vegan, with no eggs and no dairy, their softness, structure, and balance of sweetness come from a Polish baking tradition, rather than a classic American donut style.

Because of that, many Polish guests recognize familiar notes when they try our donuts — even without animal ingredients.
They’re not traditional pączki, and they’re not meant to replace them, but the inspiration is there.

That’s also why creating a donut inspired by pączek z różą for Fat Thursday felt like a natural way for us to mark this special day.

Our limited-edition Fat Thursday donut

For this special occasion, we wanted to do something small but meaningful — a simple way to introduce this Polish tradition to Malaga, in our own way.

That’s why, only on Thursday 12th of February, we’ll be offering a limited-edition donut, inspired by a classic Polish favorite.

Pączek z różą — our interpretation

Our donut is inspired by the traditional rose-filled pączek, and features:

  • Raspberry jam with a rose petals
  • A classic-style glaze
  • Candied orange peel on top

Let’s be honest: It won’t be as good as the original Polish pączek.

The originals are deeply nostalgic, made with very specific techniques, and tied to generations of tradition. But we wanted to create something that captures the spirit and flavor inspiration, adapted to what we do best.

 

For us, this donut is not about recreating the original perfectly, but about sharing a story, a tradition, and a small moment of joy.
